There's been a Chinese noodle explosion in the last couple of years, with many new styles introduced to Gotham for the first time. Enter Yun Nan, serving three types of noodles from-you guessed it-Yunnan, a southern province that abuts Myanmar and Vietnam. Rice noodles, something like spaghetti, are the heart of the menu arriving in a fiery broth laced with cilantro, green onion, and ragged chunks of ultra-flavorful beef. There are wheat noodles and rice stick noodles, too, but we'd rather grab the incredible, brain-resembling dumplings, served in a pungent broth spiked with rice-wine vinegar.
