Create your own pasta dish at this casual North Miami restaurant. Located in a shopping plaza on Biscayne Boulevard, the airy dining room has an unfinished floor, wood tables, and aqua-blue furniture. Walls are lined with shelves of wines, Italian olive oils, and books. First, pick the type of pasta you'd like: linguine, capellini, gnocchi, spaghetti, penne, or rigatoni. Next, select from 16 sauces such as carbonara ($11), alfredo ($10), arrabiata ($9), pomodoro ($8), and gamberi-asparagi (shrimp, cherry tomatoes, and asparagus, $13). Last, choose from optional add-ons: shrimp ($4), meatballs ($3), broccoli ($2), mozzarella ($2), and chicken ($2). Sound gimmicky? Don't let that deter you. Meals start with homemade flatbreads and tasty foccacia, perfect for dipping in olive oil. Pastas and sauces are all house-made and prepared with high-quality ingredients by Italian chef Monica Luotti. And if you're not in the mood to customize your meal, indulge in other specialties such as homemade meat or vegetable lasagna ($11) and eggplant parmigiana ($11).

I ate at this restaurant with some friends and it was a real surprise! I was expecting the usual Italian restaurant with checkered tablecloths .. none of this: the atmosphere is modern and trendy. The owner, a very kind Italian woman, explained us the new concept of the restaurant: you can choose the type of pasta, sauces and the additions .. you can practically build the pasta dish that you want to eat …. Hundred of variations… terrific!!! The quality of pasta is superb and even the appetizers and desserts are delicious. Next time I’ll try salads and the day specials... oh yes I’ll be back for sure, it’s unusual find a restaurant where food is very good and prices are reasonable .. finally something new in Miami!

The restaurant feels a bit like a hip Mediterranean country house, with blue and white accents, homey seating, and a little coffee/sandwich bar up front where you can "grab & go". Choose from rigatoni, fettuccine, penne, gnocchi, spaghetti, and linguine (all available whole wheat and gluten-free), then get wacky with their roster of sauces, like Gamberi & Asparagi (sauteed shrimp, asparagus, cherry tomatoes), Carbonara (egg, bacon, black pepper, Parm), and Flaminia (a yellow peppers cream sauce named after the owner), and add-ons like Parm, mozz, gorg, provolone, broccoli, chicken, shrimp, or meatballs. Amazing quality at very reasonable prices.
