Restaurant conglomerate B.R. Guest's barbecue spot is less like a roadhouse and more like an ark, a hulking wooden structure housing all of the barbecue styles of the United States under one roof. The man behind the menu is "Big" Lou Elrose, a former NYPD policeman who gained fame by winning numerous barbecue competitions and then helping man the pits at nearby Hill Country.The culinary tour through the country includes both Kansas City and Memphis baby back ribs, Carolina pulled pork, Texas-style beef ribs and more, plus sandwiches filled with things like brisket, grilled chicken and Maryland crab cakes. Wash down that meat with pitchers of American craft brews, a huge selection of bottled beers, specialty cocktails and a small selection of New and Old World wines by the glass and bottle. I wouldn't worry about reservations here; the space is huge, with a masculine design job including giant steel and wooden beams, concrete floors and dark leather chairs. —Keith Wagstaff
