Located in the Delano's chic, clublike lobby, the old Blue Sea is now Umi Sushi & Sake Bar, headed up by former Makoto and Zuma chef Toshi Motoyama. Don't worry, though, old faves like the FDR roll (tuna, salmon, yellowtail, and crab in soy paper) and the uber-posh Delano roll (poached lobster, Wagyu beef, and black truffle) are still on the menu.
