That's why Ballard's The Walrus and The Carpenter would most likely feel perfectly at home bellying up to the bar at Renee Erickson's new place. Beyond the oysters galore, we love the window that offers a voyeuristic view into the kitchen of Ethan Stowell's Fancy and Staples Mercantile. The focus at this dinner-only dining spot is obviously seafood and lots of it. Besides the bivalves, seafood includes smoked trout, clams and mussels and -- hell yes! -- Utz potato chips. That's our kind of fish and chips. Of course, the menu's going to change up all the time, so it's good to arrive with an open mind and an empty stomach.
