Troy Atherton Guard's first restaurant is also his best -- a wild culinary thrill ride through some of the more extreme realms of the fusion canon. Guard is a talented chef, working right at the top of his game, and the crew that he has backing him does an excellent job of translating his very distinctive cuisine for the crowds that pack this Larimer Square restaurant every night. If you can manage it, get a seat upstairs. But even a night spent in the basement can be made tolerable by an interesting cocktail list and fantastic apps from TAG's kitchen.

Long gone are the days when chefs sliced and diced behind an iron curtain. Today's toques like the limelight -- and they love being the center of attention, which is all the better for voyeuristic guests who like to eavesdrop on kitchenspeak while also watching a floor show. And at TAG, Troy Guard's Asian-guided restaurant in Larimer Square, the highly interactive chef's counter offers the best seats in the house. You can kibbitz with the animated cooks -- they're all talkers... More »
Troy Guard, chef/owner of TAG and the just-opened TAG|RAW BAR, grew up in Hawaii, which may explain why his board at TAG is a fish-lover's deep-sea dream, floating such dishes as Maine diver scallops puddled in a parsnip-vanilla purée and sushi rolls tucked with yellowfin or lobster. Guard's infatuation with aquatics spans the world, and he embraces a universe of sea creatures that you rarely find on Denver restaurant menus. To wit: South African black ruff, a blunt-snouted species... More »
Troy Guard's TAG, which he launched last May in Larimer Square, swaggers one of Denver's brashest border-crossing kitchens -- a kitchen that slants toward the other F-word. So what? Guard is a master of multiculturalism, and his menu, which is full of playfully modern dishes that usually erupt into something wondrous, is smart, hip and approachable. He sets off his flash-seared hiramama with pricks of jalapeños and Pop Rocks in a basin of white soy and yuzu; creates his own... More »
Butterfish to share and curry chicken entree, nuff said. Except the pop rock hamachi is a really cool dish.
