Semi-hidden within the warren of parking lots and bail shops near the Hall of Justice, Thomas Ware's restaurant serves slow-cooked rib tips, short ribs, and chicken (not quite barbecue, since he doesn't have a smoker on site). All are brushed with his signature sauce, equal parts sweet and vinegar, teased out with Liquid Smoke. The sides, named after members of his family, include Devmyster's Dirty Rice, studded with little clusters of finely ground pork, and Pop Yo' Collar collard greens, sanded with enough white pepper to numb.
