Owner and chef Taichi Kitamura, who was born in Kyoto and one of the originators of Fremont's Chiso, claims that using quality local ingredients is “the most important element in Japanese cuisine.” With that standard in mind, he takes care to prominently feature Pacific Northwestern seafood like Washington albacore and British Columbian spot prawns—and you can definitely taste the freshness.
