Try their novel bottled ice coffee, too, and take your beverage into the lobby of the hotel, where some of the city's new web start-ups are doubtlessly happening as you refresh y... More »

The "mildness" Of Our Latin Americans Is The Unobtrusive, Gracious Backdrop That Allows The Supple Caramel And Chocolate Of These Coffees To Shine.

El Salvador Kilimanjaro – Kenya Process
a few seasons back, aida batlle, known for her experimental approach to processing, asked for our help developing new experiments. we arrived with visions of grandeur from years of involvement with processing across the globe, particularly in kenya, ethiopia and burundi. after a few rounds of testing, we asked aida to focus her efforts on the kenya process. double fermentation, double washing, soaking and raised drying beds added a heavy cream flavor, increased the supple mouthfeel and exposed some of the dark fruit we love from kenya.
$25.50
Colombia La Esperanza
isaias cantillo osa and his brother eugenio worked together to create this lot on their neighboring farms in suaza de huila. the brothers process their coffee in a unique manner for colombia. after depulping, the coffee is fermented, washed, soaked overnight and then dried in a corrugated metal roofed drying apparatus that allows gentle, slow drying which lends this coffee a buoyant, juicy mouthfeel.
$16.50
Colombia La Piramide
this lot represents three smallholder producers in pedregal de cauca who consistently deliver great results and remain steadfast: ignacio quintero, jorge medina, and jose ubernes oidor. we have collaborated for years with our exporting partner in this micro region to improve quality, tighten the supply chain, and reward excellence. the cherries are manually depulped, fermented in tanks, washed by hand and dried on parabolic beds.
$17.25
Colombia El Jordan
our el jordan lot is constructed with coffee from every day of the harvest from the hundreds of members of the apcejor and acedga producer associations in order to offer the best representation of tolima province coffee. both associations are located in the gaitania de planadas portion of tolima. our producers de-pulp their coffee into fermentation tanks using hand cranked de-pulping machines. the coffee beans are washed in the tanks then laid out to dry on parabolic drying beds.
$16.50
Costa Rica Valle De Los Santos
valle de los santos, or valley of the saints, is the historic moniker for costa rica's most famous producing region, tarrazu. this lot represents our first collaborative offering from multiple farmers in costa rica. we carefully crafted this blend of coffees from beneficio don mayo, beneficio los angeles and verde alto to create a coffee whose sum is greater than its parts. each producer mechanically processes their coffee on penagos equipment and sun dries on either raised beds or patios.
$16.50
Guatemala Finca El Injerto - Bourbon
arturo aguirre and son arturo jr. cultivate their bourbon in guatemala's famed huehuetenango region near the mexican border. their eye for detail extends throughout their process including cherry flotation, extended fermentation, soaking, drying, and proper storage. each year, the aguirres approach their crop with a consistent commitment to quality; the results are evident in each cup of our most popular coffee.
$15.75
Guatemala Santa Clara
since 2009, we’ve worked with ricardo ‘el tigre’ zelaya (luis pedro’s cousin) from antigua, guatemala. ricardo cultivates his bourbon and caturra varietals under shade trees which allow a strictly controlled amount of sunshine to reach the coffee plants. he processes his handpicked cherry at his santa clara mill. it is washed in a traditional wet mill with crystal clear water, and then patiently sun dried for days on patios.
$16.50
Honduras Finca El Puente
marysabel caballero and husband moises herrera represent the fourth generation of family coffee cultivating tradition. marysabel's great grandfather felipe garcia exported his first coffee beans in 1915. their washing station sits high in the mountains above marcala de honduras in chinacla. our el puente lots are mechanically demucilaged, fermented, washed and soaked overnight before hitting the drying patios, drum dryers and newly installed african drying beds.
$22.50
Panama Duncan Estate
ricardo koyner’s farm is perched on the southern facing slopes of volcancillo in boquete de chiriqui in northern panama. his focused commitment to the farm allows for the high yields and tremendous quality that most organic producers are unable to attain. our duncan estate coffee is mechanically demucilaged, fermented for ten hours and washed at ricardo's kotowa mill. the coffee is then brought back to the farm and dried on raised african beds.
$90.00
Panama Esmeralda Especial – Mario San
the peterson family cultivates their legendary and rare gesha at hacienda esmeralda. this year, the mario san jose lot reveals a bold style with finesse. once again, the peterson’s demonstrate their gift to cultivate their gesha in a manner that awakens the delicate floral, sultry sweet and complex fruit flavors within. the petersons mechanically remove the fruit from their beans before drying on patios. we will roast this coffee on mondays. (except postal holidays!)
Africa
the birthplace of coffee produces our most exotic coffees, and it's no wonder we use words like "berry," "merlot," and "orchid" to describe their flavors and aromas. our african coffees are the starlets of our menu - bright, engaging, and, okay, sexy.
$15.75
Rwanda Huye Mountain
huye mountain is a washing station and project undertaken by two of stumptown's oldest friends in africa: david rubanzangabo and tim schilling. their fine cherry selection directly correlates to a cup layered with sweetness. after depulping, the beans are fermented overnight, washed and laid to dry on raised beds. huye mountain placed 2nd in the 2012 rwanda cup of excellence.
$18.00
Ethiopia Nano Challa
located west of jimma, nano challa is a newly formed cooperative under the oromia coffee farmer's cooperative union. until nano challa financed mechanical demucilaging equipment two years ago, no one had tasted a clean, washed processed coffee from this area, despite jimma’s reputation as the birthplace of the arabica coffee species. they repaid their financiers fully in one year from the proceeds of last year’s crop. after demucilaging, the beans are soaked overnight and dried on raised beds.
$25.50
Kenya Gaturiri
our gaturiri lot demonstrates a commitment to quality cherry selection, processing and lot separation at the washing station. each farmer has an average of 300 coffee trees grown naturally under the shade of grevillea, macadamia, and eucalyptus trees. a few years ago, we initiated an incentive program to pay pickers more for picking a1 cherry, which designates the best selection. a1 cherries are depulped then the beans are fermented and washed twice before being soaked and dried in two stages.
Indonesia
The High Altitude, Tropical Climate, And Rich Soil Of The Pacific Islands Lends Our Indonesian Coffees Their Nutty, Herbal Characteristics.
$15.00
Indonesia Gajah Aceh
gajah aceh is our first direct trade venture into indonesia. our producer partners in indonesia reside well inland from the coast near takengon and lake tawar in the aceh province of the archipelago's northern most island of sumatra. our qc team carefully built this lot from three sub-regions around the lake; kebayakan, bintang and pantan lues. after depulping and minimal fermentation, the coffees are semi-washed then dried on covered patios which protect the beans from the elements.
Blends
our blends offer the familiarity of an old friend year round. carefully crafted for consistency, these blends create a balance of flavors you’ll enjoy.
