Pat Wachter and Benjamin Thorne's barbecue delivery service sources meat for its ethics as much as its quality, which makes their barbecue pricier than most (make of that what you will). The ribs are fine, with the right bit of tug left to the meat, and so is the pulled pork tossed with a flashy tomato-vinegar sauce. Where Sneaky's shines is in the strips of kurobuta pork belly, coal-black and layered with custardy fat, and in sides like the soft, sweet corn bread and the glossy collards, quickly sautéed instead of braised.
