Skillet's taken the wheels off its street operation, settling into a cozy corner of Capitol Hill. The kitchen crew brought along its famous bacon jam-smeared burger, but there are plenty of other terrific comfort foods on the menu to please a salt-and-fat-seeking diner. A mastery of the fryer is evident on the chicken fried pork chop and fried chicken, although many diners will insist on ordering eggs no matter what the hour: Corned beef hash is perhaps the best choice on a strong breakfast menu. While a fixed location means diners don't have to stand in the rain or scrounge for an improvised seat, the restaurant hasn't abandoned the culinary focus and commitment to excellence it forged while still trucking.
