Simply Sloppy Joe has both filled and cornered a market niche, since it's the only place in Colorado that serves exactly what the name states: simply Sloppy Joes. There are six versions on the permanent menu: the Regular Joe; the Spicy Joe with a touch of heat; the Midwestern Joe, a sans-tomato, au jus-flavored affair; the BBQ Joe, nice and smoky with sauteed onions; the Plain Jane Joe, sweet with ketchup, mustard and pickle; and the Mexi-Joe, made with jalapenos, salsa and cheese sauce. Proprietor Jennifer Loberg also offers a seventh "Joe of the Week," which "can be anything from Cajun to Thai peanut," she says. But while the main event is simply sloppy Joes, Simply Sloppy Joes also offers such sides as homemade slaw, baked beans, fries and milkshakes. Why Sloppy Joes? Tired of working for other people, Loberg took her grandmother's cookbook full of Sloppy Joe recipes and decided to give entrepreneurship a shot. Her beefy gamble seems to paying off, and she says her only regret is that she didn't open the place twenty years ago. But not ever eating a gourmet Sloppy Joe here would be good cause for regret, too.
