David Silvera, former drummer for nu-metal band Korn, opened this upscale Chicago chop house in 2007. Although his former occupation might imply loud and obnoxious, Silvera's is anything but, veering to the extreme opposite with hip-hop, Dean Martin and Madonna interwoven into the musical repertoire. It's classy and dark, attentive service beginning at the door, with an escort by a suited gentleman no less. Then there are the inventive and lethal martinis in the martini lounge, appetite-whetting starters (try the five-cheese plate and crab-cake appetizer), mouth-watering steaks (of which the tender and juicy bone-in "cowboy" rib eye is a perennial favorite and as good as any you'd get at Fleming's or Morton's), and tasty sides (a five-cheese macaroni laced with bacon bits sparkles). Best of all, the Huntington Beach location means that even with flip-flops being sin couture, Hawaiian shirts and khakis still pass the casually dressy test.
