Description

Pocket-sized, lime-green Shoofly Pie was Seattle's first all-pie shop to open in years. Baker Kimmy Hsieh Tomlinson is a proponent of the all-butter crust in her quiches, pot pies, and desserts (check shooflypiecompany.com for the season's menu). The recipe creates a delicate, slightly caramelized crust that shows better in her cream pies and single-crust fruit pies than in the double-crusted apple or cake-like shoofly pies, where it can solidify quickly. No need to commit to a whole pie-Shoofly Pie sells by the slice.
