Shiver's is an institution -- that's what they call you when you've been in business for 57 years. The requisite weathered, log cabin/picnic table-and-bench décor remains in place, with obligatory cattle horns and horseshoes on the walls. Chicken, pork, and beef go into two hickory-fueled smokers (some of the meats for up to 12 hours) and come out fully imbued with real barbecue flavor. Ribs are clearly Shiver's strong suit, so the best bet for first-timers might be the rib sampler, with heaping helpings of beef, pork, baby backs, and two sides ($16.95). Squirt any of a quintet of scintillating sauces on top: red-hot; a chunkier, smokier red-hot; sweet, brown molasses-based; mildly spicy mustard-based; and hickory-heavy "Shiver's sauce." Sides include black-eyed peas, fried okra, and a couple of items you don't often see pulled from a fryer - like mac 'n' cheese nuggets and corn on the cob. Some might say the most important accompaniment to barbecue is beer, and you can get a pitcher of Bud for $7.95 (if you want that fancy imported stuff the city folk prefer, Corona, Heineken, Amstel, and the like are available). Housemade peach cobbler is the only worthy dessert; the rest are mass-produced.
What follows are the requirements for the perfect barbecue restaurant. To start, the locale must be family-owned -- preferably by kin who've been running the joint for 20 years or more. Smoke from burning hickory must waft through the air. If possible, its blazing aroma should reach beyond the parking lot and into the street. Hangout of Homestead regulars and racing fans alike, Shiver's has been operating for most of the last 50-odd years (they took some time out for natural disasters like Hurricane Andrew). It's a typical barbecue joint in that it's shack-shaped and filled with long wooden tables and benches. We went to Shiver's last night, it was a very gratifying experience. It started with a very warm welcome from our waitress who help us in our choices and made sure that our orders were out quickly and accurately. Now to the food, we were there for nothing else but the ribs, and we were not disappointed. The meat was falling of the bones, it was juicy and the sauce was to die for. We completed our taste of the south with a warm peach cobbler serve with a generous scoop of vanilla ice cream, wow, I have chills just thinking about it!!!!
