"Sevy" is chef Jim Severson's nickname. Chances are, after a few visits to his warm and handsome prairie-style American grill, you'll feel friendly enough toward Jim to call him "Sevy" yourself when he comes by your table. Which he will. The hearty, simple American fare--steaks, chops, pasta, salads--is of the highest quality, but Severson gives everything a gentle imaginative twist.
Only been once, it was delicious. Wanna go back.

So everybody in Dallas orders vodka instead of gin. And the shaken or stirred question never comes up. At least Sevy's understands that, when you deign to order a real (gin) martini, the proper end result requires a balance of spirit and vermouth. And they don't let you get away with uneducated calls. Say "Bombay" and they're likely to ask "regular or Sapphire." You gotta respect a place that respects a martini. More »
A few assumptions to start: You're out of precious vacation days; you need a break; you enjoy a good midafternoon buzz; and your boss isn't already sitting at the bar. Good, then yelp in pain, announce an urgent need to visit the dentist and call it a day. Sevy's attracts brokers and bankers and fully gruntled postal workers and housewives--just about anyone. The dress code ranges from casual on up. The kitchen serves a special afternoon bar menu. Bartender James Pintello spins out stories... More »
There's an undeniable appeal to the idea: Skip work, head to a bar and watch the day sip away into a pleasant haze while others toil away in cubeland. For this purpose, nothing beats Sevy's Grill. It's a bright, upbeat space with a steady flow of daytime regulars--including fellow slackers. Daytime bartender James Pintello keeps the conversation flowing and stirs up some impressive sipping drinks. Psychologists and HR professionals give lip service to the value of a little downtime, but... More »
Our high school principals were smart enough to ask for a note to explain any absence from school. Fortunately, our bosses consider such tactics childish, which opens the door for the occasional "dental appointment." On any day at Sevy's, you'll find well-heeled, conversant folks suffering from fanciful ailments camped along the extensive bar. In fact, the establishment even inscribes the names of chronic attendees on bronze plates. The food is great, the people interesting, and the... More »
Each year when we reexamine the people mixing cocktails around the city, a certain, shall we say, insecurity creeps into our minds. Thousands of bartenders work in Dallas and its surrounding 'burbs and most pour a decent drink. By the time the... More »
James Pintello was tending his usual Sunday night shift behind the bar at Sevy's when he received a rather unusual phone call. Someone on the other line began quizzing him--full name, military service and so on. So the veteran bartender nipped... More »
When asked to evaluate the art of bartending, few people mention the drink itself. "It's not the drink, but your actions behind the bar that matter," claims Manny Murillo of the Library Bar. By that he means a combination of attitude, customer... More »
We are, generally speaking, a timid culture seeking vicarious means of adventure. There's no need to look far for examples. When Robin Williams shouted "carpe diem," Americans seized the opportunity to purchase T-shirts bearing the message--and... More »
Ah, to be the best. Fools try to earn the sobriquet through years of dedicated labor. The younger generations, their attention spans schooled by technology and sound-bite journalism, simply proclaim themselves the best at their craft. It... More »
