Baker Kimmy Hsieh Tomlinson is a proponent of the all-butter crust in her quiches, pot pies, and desserts (check shooflypiecompany.com for the season's menu). The recipe creates a delicate, slightly caramelized crust that shows better in her cream pies and single-crust fruit pies than in the double-crusted apple or cake-like shoofly pies, where it can solidify quickly. No need to commit to a whole pieâShoofly sells by the slice.

The pies taste as good as they look. Most are sweet, but among the savory few are individual chicken potpies and quiche. Voluptuous crusts on the fruit pies: apple, peach, cherry among them.
