Sea is chef Tony Sindaco's simple, elegant bistro. Fresh catches are listed daily on the chalkboard menu at the price for a three-course meal ($25 to $35), though ordering à la carte is perfectly fine too. A 25-seat slip with mid-century modern accents and an Old Florida fish mural make for stylish surroundings while staying true to a beachy aesthetic. Servers dressed in chef whites add polish to the experience. Sindaco's menu offers refined riffs on Italian flavors from his childhood: seared calamari in a tomato pan sauce; a tuna Bolognese as a main course. A frisée salad in warm bacon dressing with a poached egg evokes breakfast, and the conch chowder infused with Caribbean spices and chilies is a destination dish. For desserts, the chocolate cherry mousse is ho-hum, while a whiskey cake or Key lime pie are sublime.

Inside this slip of a restaurant, pompano fillet is dressed as simple as it gets in butter and white wine with a splash of citrus. Scallions, cubes of butternut, tomato, and almonds add acid, sweet, brightness, and crunch. No matter what the day's catch may be, rest assured each dish will end up this harmonious, since the seafood is doctored by a master.
