Most bars are generalists, offering distilled spirits from around the world. But Rumba proves how great a bar can be when it sticks to a single specialty. The liquor of choice is rum, and Rumba does right by it in daiquiris, punches, elaborate Tiki drinks and modern cocktails. The dining room's designed to mimic a 1950s Caribbean estate, with palm frond fans, plantation shutters and dark wooden table set with bright aqua chairs. You might as well take a seat: The food's nearly as good as the drink, with crusty empandas, fresh salsas and smoky chicken wings among the standouts.
