Refuel is a fast-casual concept from Bob Blair, the owner of Fuel Cafe, which is located just across the lot in Taxi’s Drive development. The stylish spot shares lobby space with Boxcar Coffee, a Boulder-based coffee roaster that's brewing up beverages for patrons seven days a week, and serves up breakfast and lunch Monday through Friday. The ingredients are just as high-quality as at Fuel, but the preparation is definitely less involved and the presentation far quicker. You’ll want to linger over your meal at Fuel; Refuel is designed as a spot where you refuel, then get up and go.
