"I think making true pizza Napolitana is impossible in Colorado," Antonio Race, Pulcinella's owner, explains on his website. "You know why? You'd always miss one crucial ingredient - the city itself!!!" So his empire, which includes a handful of pizzerias across the Front Range and this spot in Cherry Hills Village, uses ingredients that are a combination of domestic finds and imported staples. He fires his pies in a gas oven, having long ago abandoned a wood-fired version because he was dissatisfied with the results, declaring futile any attempt to create an authentic Neopolitan crust here in Colorado. But Race has no problem making authentically good pies, and is frequently seen behind the stoves, working dough into flat disks, washing them with tomato sauce and topping them with slices of imported mozzarella.
