As a certification, "kosher" implies a set of rules for food production and consumption. As a cuisine, "kosher" means knishes, bagels, nova, pickles, chopped liver and fresh, cooked and not-so-lean corned beef. Protzel's Delicatessen in Clayton is renowned for its corned beef, made in-house and piled high on rye bread and covered with mustard. Diners can also order the salt-cured deli meat on a Reuben (with sauerkraut, Russian dressing and swiss cheese), topped with coleslaw or even matched up with additional meats. The full selection of sandwiches at Protzel's includes roast beef, pastrami, peppered beef, salami and bologna. The deli also offers specialty sandwiches, such as the John Carney Special, with a third of a pound of corned beef and pastrami, Munchee cheese, honey mustard and coleslaw served on top of an onion roll.
