At Posh, a contemporary American restaurant tucked into the Optima Camelview condos, chef Joshua Hebert"s tasting-menu-only "improvisational cuisine" concept is ambitious, but not a complete surprise; a stint in Japan acquainted him with omakase dining, where you entrust the sushi chef with orchestrating your entire meal. Here, you"ll get a checklist to fill out - how many courses you want, which of the day"s featured meats and seafood you like (or don"t like; there"s an all-vegetarian option, too), how done you like your meat, and other dietary restrictions.
