The county's premier place to enjoy the timber-soaked flavors of the Pacific Northwest is what independent dining should be about: a spare design, gallery-deserving artwork, plus owner/chef Kim Jorgenson's ever-evolving experiments. For dinner, get the lamburger: Cooked to a rosy shade and speckled with oregano, the patty is slightly gamy but thrilling because of it. It's a sandwich so epic and refined that it's an easy contender for one of the finest burgers in OC. And Plums itself? Well, no contest: It is one of the best places to have dinner in OC.
