Daniel Patterson's third restaurant occupies the midpoint between the precise experimentalism of Coi and the glowing rusticity of Il Cane Rosso. It's a stylish, casual place where the walls are painted a plummy black and the tables are long planks of wood. There are more vegetarian items on Plum's small-plates menu than meat-centered ones, and the meaty dishes use small fish and less-common cuts of meat. Diners wary of Patterson's science-friendly cooking should dine at the counter of the open kitchen. There, they'll spot cooks using immersion circulators and Pacojets - but primarily cooking their hearts out, the old-fashioned way. Charlie Parker composes intricate, exquisite dishes like plancha-grilled squid with smoked lentil puree and roast artichokes, or roast carrots with wood sorrel and brown butter.
