Frying up the best chicken in Williamsburg, and some of the best in Brooklyn, Pies-N-Thighs represents a sort of hipsterized Southern diner, a "meat and three" place that delivers "meat and one" to an adoring constituency. The bird is unimpeachable: brined for plumpness, moist-fleshed, and unfailingly crisp on the outside. Nearly everyone orders it. The fried fish is nearly as good, but the hamburger is only so-so unless you go for the gloppy Insane Burger. Best sides include hush puppies, cole slaw, and black-eyed pea salad. And the pies? Go for the fruit! Families with kids invade the place between 6 and 8 each evening, and there's outdoor seating in back.

Even if I ate poultry, I'd still be inclined to sing the praises of the fried catfish at Pies-N-Thighs. It's the kind of catfish that is usually confined to a hyperbolic memory of something consumed south of the Mason-Dixon Line: crunchy, salty, and nearly greaseless on the outside; tear-jerkingly moist and tender on the inside.
