Oi Thi Nguyen, mother of Pho-natic co-owner Nhanh Tran, knows her pho: She sold bowls of the traditional Vietnamese noodle soup on American military bases during the Vietnam War, using fresh produce and broth cooked for hours. And now the family has brought this know-how to downtown Denver, giving the city a taste of Vietnamese street food in a soothing setting with walls tinted soft shades of green. You'll often find the joint buzzing with tables of two, five and ten diners, all popping spring rolls past their lips and slurping noodles from huge bowls of smoldering, anise-scented broth, accompanied by dunes of glistening Asian greens, verdant lime wedges and bands of jalapenos. In addition to dozens of versions of pho, you'll also find bun (noodle bowls) and com (rice plates), desserts and a special kids' menu, as well as blended drinks, smoothies and boba tea. No wonder Pho-natic quickly developed a pho-natic following!
