A strip mall in Staten Island might not be where you'd expect to find a wonderful Vietnamese restaurant. But there it is, hunkered in a strip mall in New Springville, just off the expressway, with a functional downstairs dining room, and a fantasy environment upstairs featuring booths and a water wheel. The pho is splendid, with a broth lighter than most, delicately scented with cinnamon, plenty of rice noodles, and the usual sliced beef add-ins. The over-rice dishes keep pace, most notably the conventional combo of grilled pork chop, shredded pig skin, and "crab patty," which is more like meat loaf.
It's not easy to get to, but a perennial candidate for best Vietnamese in the city--every since Bronx's sainted World of Taste closed last year--is Pho Mac, located in a strip mall right off the Staten Island Expressway. The core of the menu is a brilliant pho in the Saigon style, with a light broth laced with sweet spices and your choice of a dozen combos of beef--including variety meats--and finer-than-usual rice noodles. For delivering a profound kick in the ass to misguided American foreign policy, we want the revolutionary Vietnamese hero to have the best Viet food we can muster as his last repast. As such, we'll smuggle him into a rather conservative neighborhood wearing a George Bush mask. There's no better pho in town than that found in a strip mall in Staten Island's Graniteville (cool name!) at Pho Mac.
