Pho Fusion covers four countries with a thirty-dish menu that includes pho, hot-and-sour and wonton soups, simple shrimp-lettuce-and-noodle spring rolls and deep-fried Vietnamese pork egg rolls. The food is fast, filling and good. Owner Tom Bird is deeply rooted in Denver's Vietnamese community, and he's onto something here -- maybe the formula for a fast-food Asian empire.

One day Tom Bird realized that no one in Denver had combined the booming fast-casual restaurant model with the fresh, healthy benefits of Vietnamese cuisine. Also, we love the lo mein and the sesame chicken, the curries and the idea that all these dishes from all these differing canons can exist so comfortably together on one single, straightforward menu. Owner Tom Bird gleefully tosses out all geographic constraints, cramming competing influences together into a single, coherent, American fast-casual model that every year seems as though it really ought to be the Next Big Thing. No such luck � but after five years, Bird finally got a second location open, introducing the good people of Highland to his very good food.
