The menu is pared down and easily mastered. Try the banh xeo appetizer, a crunchy, chewy crepe with shrimp, beef, mushrooms and bean sprouts in a turmeric-yellow flour batter and wrapped with lettuce and herbs in just-moistened rice paper.
