Mark Fischer made his reputation in Carbondale, where he opened Six89 in 1998 in an old bed-and-breakfast. That was followed by Phat Thai in 2003; in 2011, he opened a second Phat Thai, in Denver – and the next year, he closed Six89. “Any degree of success in this business is predicated on a certain degree of humility,” he says. “At the end of the day, they're just restaurants, and tomorrow you start all over.” At Denver’s Phat Thai, he started over in an old bakery/sandwich space, giving it a makeover that’s appropriately upscale for its Cherry Creek setting. The menu is more adventurous than authentic; Fischer has incorporated dishes (and tasty drinks) inspired by his travels to Thailand, Malaysia, Vietnam and beyond. While they often can use more spice, the emphasis on quality ingredients is nice.
