Since the mid-1980s, crowds of hipsters have populated the dark rooms at Paris on the Platte, sipping espresso in one of Denver's favorite alternative coffeehouses. The crew at Paris took its act to the street with its pale-blue food truck, which dishes out sandwiches and coffee. Like many of the city's mobile food-truck owners, Paris's owner was inspired by the mobile-vending scene in Portland, and, wanting to stay as cutting-edge and hip as her coffeehouse, she bought a truck and fitted it with an espresso machine and basic kitchen gear.
