At first blush, Palettes is one of the coldest, least inviting rooms in the city. Everything that isn't white is gray -- gray-blue, silver-gray, slate gray -- and everything that isn't gray or white is art, which is worse. But the food is wonderful. Owner Kevin Taylor handles the big-picture stuff, but the chef who handles the day-to-day ops (which means lunch seven days a week plus Friday dinner), is a true craftsman, one who brings the skills and sensibility of a French/Italian/American blue-collar cook to the white-on-white world of fine-dining.
