Julian Cordova is the grandson of Stella Cordova, who bought what had been the Chubby Burger Drive Inn in 1969, added her Mexican specials to the menu and turned the place into Chubby’s, a national legend. Several of Stella’s grandchildren have gone into the family business, including Julian. In 1987, he opened the first Original Chubby’s in Thornton, trademarking the name and serving up variations on the old family recipes that may not be quite the same as they were cooked up at the original Chubby’s, but still have won fans across the city. At Julian’s Original Chubby’s, the service is swift, the amenities almost non-existent (stapled-together paper plates), and the chile very, very hot. And now that there’s a second Original Chubby’s, which opened on Santa Fe Drive in early 2013, Julian’s looking at other locations around the metro area where he can duplicate the original.
