Portola Coffee Lab in Costa Mesa is a wonderland whose aesthetics combine sleek and steampunk, whose mileau is hipster yet humble, where tattooed guys with gauges in their earlobes sport lab coats and concoct the best damn coffee in the county. Their sorcery is legit: No matter how you like your coffee, everything comes out with a zap you just won’t find anywhere else, each process and roast offering multiple hues of brilliance. If they can make a caffeine believer out of a non-coffee-drinker, imagine what they’ll do to caffeine fiends!

    I paired the ganache infused mocha with the warm chocolate-chocolate croissant. I dipped it in. Now I know the sweet ecstasy Augustus Gloop felt when he drowned in Willy Wonka's chocolate river.

    an interactive Coffee R+D lab where you can actually learn about the subtle nuances of perfecting a cup of joe. Currently sipping my Kyoto Iced Coffee, heaven in a cup.
