Brasserie Pascal is presently the most classically Gallic of all French
restaurants in OC, even counting Olhats' own eateries. The chef has gone
"all in" on his gamble, ambitiously offering items you've never seen him do.
This, you can tell, is the restaurant he's been waiting to do. Olhats' most
daring bet: a steak tartare that he's dubbed as the "House Specialty." Raw,
high-grade beef is chopped to bits then mixed with a little onion, a touch
of acid, and formed into a patty. In the mouth it registers like Japanese
sashimi or Hawaiian poke-a refreshingly cool, unfiltered, primal flavor of

Try the Roasted Beef Marrow Bones! The thrill of eating of your first one will feel like it's a forbidden kind of food, as if you're eating something you're not supposed to enjoy. But you will!
The Champagne Cocktails on Happy Hour and the Patch Work appetizers are the best!
Spend happy hour with Sean, the best bartender around.
