Restaurateur and wunderkind Michael Hebberoy, part of the recently split husband-and-wife team behind the Portland-based, nationally known restaurant company ripe (yep, with a small "r"), is the mastermind behind One Pot. He's been staging underground dinners at some of the hippest (the Hideout) and most surprising (Verité Coffee/Cupcake Royale) locales in Seattle, instigating conversation between fellow diners by seating them at communal tables and getting them to pass the asparagus to one another. The food, though simple, is great. At a recent One Pot, the menu featured skinny, lemon-spiked asparagus with salty cheese shavings, ultra-green pea vines, yellow-fleshed fingerling potatoes, and tender, red-wine-stewed beef. The conversation revolved around revolutionaries.
