Housed in a strip mall on East Colfax, OiNKs! has a typical fast-casual setup: After perusing the chalkboard menu on the wall, you place your order at the counter, then take a seat at the bar lining the window or at one of the cozy tables equipped with rolls of paper towels and an array of sauces with which to decorate your slow-smoked meats. OiNKs! uses a secret rub on its chicken, pork, wings, brisket and St. Louis-style ribs, then smokes the meat over pecan wood for a sweet, nutty flavor. The eatery also offers tofu in bulk, on sandwiches or as a platter. Sides include traditional favorites such as collard greens and fried okra, and not-so-traditional options like the sweet-potato-and-bacon salad or the potato-parsnip mash. Whether you're picking up a whole bird for the family (don't forget the brownies for dessert!) or just a half-dozen wings to soak in one of the sauces, OiNKs! makes a good pit stop for 'cue lovers.
