Owner Mark McConnell turned his craving for Native American foods into a business and now offers the fare at Off the Rez, a food truck he co-owns with his girlfriend Cecilia Rickard. McConnell's love of barbecue and a fondness for the pow wows he experienced in his youth led to the reinvention of the fry bread taco, which so far, at $4 each, are a hit in Seattle, filled with barbecue pulled pork or beef, vegetarian, or chicken chili. The Indian Tacos, also served on McConnell's handmade fry bread with a choice of smoky chili topped with cheddar cheese, iceberg lettuce, pickled red onion and a drizzle of cumin crema, are also popular.
