Sometimes, when you want Oaxacan food, you want it immediately – like from a truck that will serve it up fast. That’s where the Oaxacan Quesadilla Truck comes in. Every day, usually from 10 a.m. to 6 p.m., a very nice woman stands behind her cart on Echo Park Avenue, just north of Sunset, where she makes blue corn tortillas by hand and fills them with stuffings ranging from chicken and beef to squash blossom and corn fungus. Top them with salsa and cactus salad, and you’re good to go.
