Num Pang means "sandwich" in Khmer; the restaurant is single-minded in its eponymous devotion to Cambodian sandwiches, offering six different versions and nothing else to speak of, although the blood orange lemonade is very tart and refreshing. The sandwiches are petite, about half the size of your average Vietnamese banh mi, and are made with wonderful semolina rolls from Parisi Bakery. The rolls at Num Pang Sandwich Shop in the East Village are toasted slightly, slathered with chile mayo, pickled carrots, a slice of cucumber and a few sprigs of cilantro. Choose your filling: pulled pork, peppercorn catfish, coconut shrimp, hoisin veal meatballs, cauliflower-eggplant, or grilled skirt steak. We're partial to the catfish, which has a peppery outer crust, napped with sweet soy sauce.

Although it's true there's virtually no Cambodian food in New York, that's not an absolute. There is a place in Greenwich Village that specializes in sandwiches something like Vietnamese banh mi, but made according to Cambodian culinary principles, and that place is Num Pang Sandwich Shop. While it began life three years ago with a slender number of fairly predictable sandwiches, the menu has evolved considerably since then, and now one of the place's most interesting features is sandwiches...
