CLOSED As the name has it, Noodle Theory specializes in either soup noodles (in big round bowls) or sautéed noodles (in deep square bowls). There are also a few starters (mostly dumplings), salads, and vegetable sides. Chef-owner Louis Kao uses quality ingredients, including Niman Ranch meats, and his pan-Asian dishes are excitingly conceived and seasoned. We love the ground pork in black bean sauce over noodles, the pork belly ramen, and the charred beef atop udon in coconut lime curry broth. Desserts feature doughnut holes with caramel sauce.
