Italian-born owner Michele Colombo rejects the American idea of the Panini as a pressed sandwich. Here he simply toasts his bread and cuts his meat to order, carefully maintaining a ratio of two parts filling to one part bread.The selection of meats is impressive, ranging from prosciutto di parma and bresaola to speck and hot salami, which are then piled on either an Italian roll or two pieces of fluffy Pullman bread. There are even a few vegetarian options as well, which substitute imported cheeses like buffalo mozzarella and pecorino for meat. In true Italian style, you can finish your meal with an espresso, made with beans from Illy. The Soho space is refreshingly clean and modern. The Berkel meat slicer is reverently housed in a clear plastic case, with various meats and loaves of bread tucked into little cubes behind the counter. Brightly colored square tables are surrounded by stools for those who want to eat in, while delivery is available for office workers in the area.âKeith Wagstaff
