At a sleek counter, the fashionable crowd sips away on colorful cocktails. From the ProvenASSal ($12), which incorporates home-brewed dry vermouth and alavender-infused Plymouth gin,a to the Martinez Cocktail ($12), a martini predecessor with maraschino liquor and homemade absinthe bitters, the drinks dazzle, while veteran barkeeps mix to a steady beat.
