Village Voice's Description

Empellon ("Push") is the brainchild of Alex Stupak, long
the pastry chef at Wylie Dufresne's WD-50, the city's premier science chef outpost. His defection into the world of street tacos came as something of a surprise, but the excellence almost makes the high price (two tacos for $12 to $22) worth it. Meats such as tongue, sweetbreads, pork shoulder, lamb barbacoa, and chicken experience long braising, with extra flavors (chiles, olives, raisins) cooked deep into the taco fillings. Added as an afterthought, the conventional main courses are a mess, but there are other gems on the menu, including one sope featuring refried beans and an egg, and another with eggplant and crema. The elegant desserts, too, are worth trying -- not surprising given the chef's background.

Try the beer-braised tongue taco here, the brined pork tongue is cooked with bacon, chorizo, onions and a slug of Negra Modelo. It's one of NYC's 26 best tacos!

Try the rich beer-braised-tongue tacos. The soft, shredded meat is slow-cooked with Negra Modelo, bacon and chorizo. It’s one of our #100best dishes and drinks of 2011.

The 2-room gastro-venture is Mexican, with the chicharon to back it up. Guac with cashew salsa, red snapper ceviche, masa tarts with short rib & tacos.

  • For a red wine, check out Chateau Maris' grenache. Languedoc's La Liviniere sub-appellation is home to the zone's best wines and 2008 was an exceptional vintage. Expect blackcurrant and violet notes.

The sweetbread tacos are incredible, especially alongside an Espolon Reposado with Sangrita!
