The weekend pozole is stout and nourishing; accompanied by a lush tostada, it makes a full meal. Weekdays, lunch on chicken, goat, or cow tongue tacos or, even better, chilaquiles-tortilla chips tossed with green chile sauce surmounted by a pair of fried eggs. For dinner, select the familiar mole enchiladas or chicken adobo, a quarter-bird bathed in vinegary red chile sauce.
