You've probably been let down in the past by big, gaudy pans of paella, but head to Cata, a pretty tapas bar from the team behind the romantic West Village spot, Alta. The paella at this Bowery restaurant is made wide metal pans, in thin layers, with traditional Bomba rice. In the restaurant's richest and most exciting version, you'll find mushrooms and duck confit, a house duck sausage made from the legs and breast, and a little seared foie gras. Many of the traditional tapas are also worth ordering, like hot and fluffy cubes of fried chickpea puree, dusted with chile powder and a chiffonade of mint or crisp patatas bravas served with a lovely, dense froth of aioli that works like a fluffy mayonnaise. The space is light, bright and informal, with huge windows that allow the Stanton Street light to pour in. And while the long, communal tables can occasionally make for an awkward dining experience, the proficient service and lovely space lend themselves to an atmosphere that's very friendly, especially after dipping into Cata's huge selection of gin and tonics. --Tejal Rao

Leeks bruschetta w romesco sauce was mind blowing. Deviled eggs w fried oyster was awesome as well. And oxtail - melt in your mouth. Do it!
A gin & tonic heaven. Get the oxtail, goat cheese, chickpea fritters and chorizo, prawns and wings paella.
They have more than 25 kinds of G&Ts and the tapas are delish. Enter on the side street, not Bowery. Cute place.
