Inspired by the gourmet cooking of Chicago's Rick Bayless, the menu presents authentic regional fare of Mexico at the taqueria level of endeavor. The tacos themselves--two to an order--are scrumptious, simply dressed with cilantro and onions and mainly featuring long-braised meats (homemade chorizo, however, is our favorite). The spice-rubbed rotisserie chicken and cudgel-size beef rib are other superlatives, and you can't go wrong with almost anything on the micro-brew-oriented beer list. The place is mad cramped, so try to go early or late, and you may be delighted or repulsed by the Mexican wrestler motif.

Try the cemita poblano, a whopping handful of shredded pork, cheese, avocado, mango and aioli, which is served only at lunch. The secret and critical ingredient is papalo, an herb similar to cilantro.
