Description

Namastey India a deceptive place—your classic ethnic store of streaked floors, plastic tables, calling cards, and hi-def television tuned in to native entertainment (sumptuous Bollywood movies in this case, of course). The buffet has no markers, although your Orange County life should’ve already taught you how to distinguish your paneer (cheese) from your palak (spinach) and tikka masalas. Poster boards on the wall feature other hand-scribbled specials—order from here, from the buffet, it doesn’t matter but order because the people behind you are fidgeting. Namastey’s emphasis is on Punjabi-style food, which means the meats and breads come from the tandoor, and the spice level is cosmic.

The table, which might give anyone pause, is an array of the known (saag paneer, chana masala) and the unknown (bitter melon, curried jackfruit, soy "fish" curry). Those who can't bring themselves to order from trays should try the made-to-order snacks called chaat, assorted crunchy crackers made of chickpea flour and topped with everything from insanely spicy...
