Description

The Kitchen specializes in food from the Mustang region of Nepal, an ancient city-state on the northern border with Tibet in a lovely valley ringed by mountains. While the food reflects the influence of Chinese, Indian, and Tibetan cuisines, regional specialties abound. Examples are: the poodle-shaped loaf of beaten buckwheat starch called dhido, the scented mutton jerky known as sukuti sadeko, and bhatmas chiura, a dry salad of toasted soybeans. Most entrees come on a thali which subtends a small serving of curry, various pickles and sauces, and a vegetable dish or two, centered by a starch such as polished rice or ting momo -- a knurled white steamed bun. The dining room is especially commodious.
